Cooking for Dummies #2: Puff Pastry Pizza

When starting out on your own cooking meals can be some what of a mission. It is all to easy to get stuck in a rut of microwave meals and Super Noodles, but it doesn’t have to be like that. This year I’m going to be continuing my Cooking for Dummies series providing you, my dear readers, with some simple and most importantly tasty dishes to get you on your feet.

This puff pastry pizza gets some serious points on the yummy scale and is one of those dishes it’s incredibly hard to screw up. But don’t take my word for it – try it out for yourself and see!

Recipe serves 4 (when served with sides)

You will need:

Jus-Rol puff pastry sheet (can buy from most supermarkets, often found in freezer section)

2 heaped tablespoons of green pesto

A red onion

A small block of feta or goats cheese

3 salad tomatoes

Start by heating your oven to 180 degrees and laying out your pastry sheet on a greased (or tin foil lined) baking tray. Fold the edges in by about a centimetre so you get a nice crust.

Next, Chop the tomatoes and onions however you wish. As you can see I just decided to slice them but aesthetics aren’t overly important!

Spread the pesto over the pastry in an even layer (minus the crust!) and arrange vegetables on top.

Finally crumble over some feta/goats cheese to your liking and pop in the oven for about twenty minutes or until the edges are browned.

Enjoy with homemade oven chips and salad!
